Spinach Mozzarella Meatloaf

INGREDIENTS:
1 1/2 pounds ground beef
1 (10 ounce) package frozen chopped spinach, thawed and drained well
1 1/2 cups Italian seasoned bread crumbs
2 cups shredded mozzarella cheese, divided
2 eggs, lightly beaten

Preheat oven to 350 degrees F. Lightly grease a 5x9 inch loaf pan.

In a bowl, mix the beef, spinach, bread crumbs, 1 1/2 cups cheese, and eggs. Transfer to the loaf pan.

Bake 1 hour, to a minimum internal temperature of 160 degrees F. Top with remaining cheese to serve.
