Zucchini Stew

PITTSBURG —

A quick one pot dinner that everyone will enjoy! It will use up many of those over abundant garden veggies and is great for low-calorie searchers. This stew is also geat as a vegetarian dish, just omit the ground turkey!
Leftovers are fabulous!

1     pound Ground turkey
6     Zucchinis
1/2     Onion (yellow or red)
5     Tomatoes
1     (4 oz) can Tomato sauce
1     clove Garlic
2     cups Elbow macaroni OR
2     cups Cooked rice
1     Tab. italian seasonings
Grated parmesan or romano cheese to taste
Salt and pepper to taste

Chop onion and garlic, saute with ground turkey until turkey is no longer pink. Add italian seasonings.
Slice zucchinis in quarter inch slices. Peel tomatoes and slice. Add tomatoes and zucchinis to ground turkey mixture along with can of tomato sauce, cover pot and put on low heat.
While stew is cooking, cook either macaroni or rice. When done add to stew mixture and simmer for about 15 minutes. If stew appears dry add water to desired consistency.
